It Started with a Spit.

Not the rude kind — the rotating, fire-kissed, flavor-dripping kind.

Two college kids from Minnesota and Utah had a problem: the bold, from-scratch Mediterranean street food you could find on every corner in Europe didn't exist in America. So they built it.

Named after the classic vertical broiler that slow-cooks proteins to perfection, Spitz brought the flavors of the streets — döner, falafel, handmade sauces — and dropped them into a fast, affordable, no-reservations format that didn't exist yet.

That was 2006. Before "fast casual" was a thing. Before anyone was putting street art on restaurant walls or craft beer next to a döner wrap.

We were early. And we were hungry.
